Root Beer Stand Popcorn

Popcorn Recipe Ingredients:

    8 cups Gaslamp Kettle Corn Popcorn
    1/2 cup unsalted butter
    1 cup brown sugar
    1/2 cup root beer
    1 cup corn syrup
    1 tsp salt
    1 tsp vanilla extract

Popcorn Recipe Directions:

Line a large cookie sheet with parchment paper. Set aside. Pour Gaslamp Popcorn into a large bowl, and set aside.

In a large saucepan over medium heat, cook butter and brown sugar until sugar dissolves. Add the root beer and cook over medium heat for about 3 minutes, bringing it near to a boil. Add corn syrup and allow to cook over medium-high heat until thickened.

Once it begins to thicken, and resembles caramel remove from heat, and add salt, vanilla and root beer extract. Stir the mixture until smooth. Allow to cool for about 7 minutes and pour over the popcorn, and mix everything.

Transfer popcorn mixture to the cookie sheet and spread evenly. Allow to cool on the pan until the root beer mixture hardens up. Serve.

My Mom and Dad and of course, me. My Mom purchased it at Vons in Oxnard, California. We sat and ate just about the entire bag at one sitting.
