Gingerbread Caramel Popcorn

Popcorn Recipe Ingredients:

    1 bag Gaslamp Sea Salt & Olive Oil Popcorn
    3/4 cup packed brown sugar
    1/2 cup butter
    1/4 cup light corn syrup
    1/4 cup molasses
    1-1/2 tsp ground ginger
    1/2 tsp ground cinnamon
    1/4 tsp salt
    1/2 tsp baking soda
    1/2 tsp vanilla extract
    1 cup gingersnap cookies, crushed

Popcorn Recipe Directions:

Place popcorn in a large bowl and set aside. Butter the sides of a small saucepan. Add brown sugar, butter, corn syrup, molasses, ginger, cinnamon and salt. Bring to a boil over medium heat, stirring constantly. Boil without stirring for 5 minutes.

Remove the saucepan from the heat; stir in baking soda (mixture may foam). Stir in vanilla. Quickly pour over popcorn and mix well with a wooden spoon until the popcorn is evenly coated with the caramel mixture.

Sprinkle and mix in the crushed gingersnap cookies. Transfer to two greased baking pans. Bake at 250°F for 45 minutes to 1 hour, stirring every 10 minutes. Remove from pans and place on waxed paper to cool.

My Mom and Dad and of course, me. My Mom purchased it at Vons in Oxnard, California. We sat and ate just about the entire bag at one sitting.
