Chai Caramel

Popcorn Recipe Ingredients:

    10-12 cups Sea Salt & Olive Oil Popcorn
    3 sticks unsalted butter
    2 cup packed brown sugar
    1 tsp vanilla extract
    1/2 tsp ground cinnamon
    1/4 tsp ground nutmeg
    1/4 tsp ground cloves
    1/2 tsp ground cardamom
    3/4 tsp kosher salt
    1/2 tsp baking soda

Popcorn Recipe Directions:

Place Gaslamp Popcorn into a large bowl. Arrange your baking racks to be on the top and bottom. Preheat oven to 250°F. Line two baking sheets with parchment paper or wax paper. Set aside.

In a large saucepan, melt the butter and sugar over medium heat. Stir until sugar is dissolved. Increase heat to medium high. While continuously stirring, bring to a boil for around 4 minutes. For exact temp, you'd want it to reach about 300°F.

Remove from heat, and add the rest of the ingredients. Pour the sauce over the popcorn slowly, while stirring the popcorn. Divide the coated popcorn and spread evenly between the two baking sheets. Place in the oven. Every 15 minutes, stir the popcorn and spread back out. After the first 30 minutes, put the bottom rack on top, and the top rack on bottom. Remove from oven, let cool slightly and form into balls.

My Mom and Dad and of course, me. My Mom purchased it at Vons in Oxnard, California. We sat and ate just about the entire bag at one sitting.
